Marinated shrimp

<p>This is a beautiful dish when layered in a clear, class compote and serves as a lovely addition to a festive buffet OR just darn good snack for friends and family over on a Saturday night to watch a movie or game.</p> <p>Also very nice appetizer with wine, good friends and great conversation&#8230;my personal favorite!</p>

Serves: 10-15 appetizer portions OR 8-10 as a salad served on a bed of lettuce


Ingredients
4 lbs Shrimp large (can use medium)
4 medium Vidalia onions thinly sliced
4 medium lemons thinly sliced
1 medium juice of lemon
1 cup condensed tomato soup
1 1/2 cup canola oil
3/4 Cup white vinegar
1/4 cup sugar
1/2 teaspoon paprika
1 teaspoon cayenne
1 Tablespoon dry mustard
1/4 teaspoon Tobasco
several leaves lettuce (optional for serving)

Step by Step Instructions
  1. Place shrimp, onions and lemons in a large container with good fitting lid (ie Tupperware). Mix remaining ingredients together and pour over shrimp mixture. Marinate in refrigerator at least 24 hours. Serve in a bowl in marinade with toothpicks OR drain ans serve as a salad on a bed of lettuce.
