Cocoa Spiced Salmon

Ingredients
1/2 cup
Orange juice
4
Salmon filets
1 tablespoon
Brown sugar
2 teaspoons
Sugar
1 teaspoon
Baking cocoa
1/4 teaspoon
Cayenne pepper
1/4 teaspoon
Ground cinnamon
1/8 teaspoon
Salt
1/8 teaspoon
Pepper
4 tablespoons
Butter (melted)
1 medium sized
Navel orange (thinly sliced)
Step by Step Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Pour the orange juice into a shallow dish and let the salmon stand in it at room temperature for 15 minutes (skin side up!)
- Stir the brown sugar, sugar, cocoa powder, cayenne, cinnamon, salt and pepper together in a small bowl.
- Place the salmon skin side down on the baking sheet and rub it with the spice mixture. Place the orange slices onto the salmon and brush it with melted butter.
- Bake the salmon for 20 to 25 minutes, then serve.
