Marinated Collard Greens Salad

Vegetarian!

Ingredients
1 1/2 pounds Collard greens
3 tablespoons Olive oil
1/2 teaspoon Salt
1/3 cup Balsamic vinegar
1/3 cup Onion (diced) (preferably red)
3 cloves Garlic (minced)
1 tablespoon Whole grain mustard
1/2 teaspoon Italian seasoning
1/2 teaspoon Red pepper flakes
2 small Tangerines (or similar citruses) (peeled and divided into individual pieces)
1/2 cup Sliced almonds (or try other nuts)
Grated Parmesan cheese (to taste)

Step by Step Instructions
  1. Mix the balsamic vinegar, diced red onion, garlic, mustard, Italian seasoning, red pepper flakes together and set the mixture aside.
  2. If need be, Tear the collard leaves into small pieces and dice the stems, then mix the pieces together.
  3. Drizzle the collard leaves with olive oil and salt, then stir and rub them into the leaves. Pour in the vinegar mixture and gently toss to coat.
  4. Top the salad with the citrus, nuts, and Parmesan. Cover the salad and let it rest in the fridge for at least 4 hours before serving.
