Slow Cooker Beef Osso Buco

Serves: 4 servings
Ingredients
1 1/2-2 lbs
beef osso buco (beef shanks)
1 cup
Italian seasoned tomatoes
1/2 cup
beef broth
1/2 cup
dry red wine (such as Cabernet)
1
garlic clove, chopped
1/2
yellow onion, sliced
1/4 cup
chopped celery
1/4 cup
chopped carrot
1/4 cup
chopped mushroom
1 1/2 Tbsp
vegetable oil
Salt and pepper to taste
Step by Step Instructions
- Heat a large skillet over medium high heat. Add 1 Tbsp vegetable oil to pan. Season the beef with salt and pepper and add to pan. Cook until browned on each side. Once browned, remove the meat from the skillet and set aside.
- Add 1/2 Tbsp oil to pan and add onion, celery, carrot and garlic to the pan. Cook until the vegetables are soft. Add red wine and beef broth to the skillet and whisk the drippings into the liquid. Add mushrooms and cook for about 2 minutes.
- Pour the liquid mixture into your slow cooker and then place the beef into the mixture. Pour the Italian seasoned tomatoes on top. Cook for 8 hours on low or 4 hours on high. Spoon on top of risotto or noodles and garnish with fresh herbs like parsley.
